Red Candied Apples

  • 10 firm, tart red apples (Macintosh, Gala)
  • 10 Popsicle sticks
  • 3 cups granulated sugar
  • 1/2 cup light corn syrup
  • 1 cup water
  • 1/4 tsp. cinnamon
  • 1/4 tsp. red food coloring

Candied Apples

Choose apples that are firm and unbruised. Wash thoroughly and dry. Remove any stems.

Insert the Popsicle sticks into the stem end of the apple. Cover a cookie sheet with parchment or wax paper.

Put sugar, syrup and water in a deep pot. Heat over medium-high heat and stir to dissolve.

Boil without stirring until liquid is 300F (150C) on your candy thermometer. This is the hard candy stage. To test, drop a drop of syrup into cold water. The syrup should separate into brittle threads. Once the syrup reaches this stage, remove from heat.

Add the cinnamon and food coloring and stir. Dip the apples, one at a time into the syrup. Carefully swirl them around to coat the skin thoroughly.

When well coated, place the apple on the cookie sheet to cool.

If the syrup starts to harden while dipping, just reheat it.
